I like to cook & eat many of the critters I harvest (not necessarily furbearers 'tho). Since we are such a creative & diverse group I thought it would be a neat idea to share some recipes here. Go ahead & create a new thread for each recipe to keep them seperate and easy to read.

Fried rabbit with Gravy.
Take and cut up a fresh rabbit 1 1/2 cups flour 1 can creamy mushroom soup- Maybe 2 if big rabbit 1/2 spoon salt 1/2 teaspoon Black pepper 2 eggs 1/2 cup milk
Mix the flour,salt, pepper into a good mixing bowl. Next mix the 2 eggs and 1/2 cup milk into another container. Then take your rabbit pieces and dip in the egg and milk mixture. Then dip and roll the same piece in the flour and salt, pepper mixture. Once you have that piece covered do it again. Called double battering.
Then fill a 2 to 4 quart frying pan with enough oil to cover the rabbit pieces half way up. Now fry the rabbit pices until golden brown. Once all the pieces are done. Place these in a dutch oven. Add the mushroom soup with enough milk to make it cover the rabbit. May take 2 cans if its a big rabbit.
Place in oven and bake at 350 degrees for 20 minutes or until the soup begins to simmer. Once done place on a serving tray along with the mushroom gravy in a bowl. Then mash some home made mash potaotes and sweet corn for a vegetable side. A large glass of iced Tea. Sweetened. Now thats a meal.

BBQ Coon
Roast coon in the oven in a broiler pan Cut up 1 onion and two apples to put in pan with coon broil til meat pulls off the bone easily debone the coon put meat in crock pot with 1 bottle of your favorite bbq sauce and add a cup of brown sugar and stir

Maybe I'll get midomo to slip me a coon so I can cook it without the family knowing. That way it will be tasted before any comments can be made. Is that wrong ? lol

We just sold 25 coon carcasses to an old gentleman in KC. He said it is sad that all the old timers are dying off and the youngin dont take to wild game. I got a recipe for skunk sandwich spread. I'll have to dig it up (even though I think I know it by heart)

Does anyone out there have a recipe for otter? Yeah, skin it and toss the carcass... Really, tried de-boneing, chunked, rolled in Lousiana Fish Fry and deep fried...big mistake...dogs wouldn't hardly eat it...tasted like bad calf liver...
