Years ago, I learned I was too hot and too much smoke and no drip pan for moisture. I changed my ways and use a thermometer.

Yup, temps being too high was a problem for me too. Ruined a lot of pork trying to figure it out. The thermometer is your friend. The big pellet smoker the family got me has two probes and works good. I still miss my old charcoal smoker though. Used it for 3 lustrum until it finally rusted the bottom out.

I would post a pic of stuff to munch on while the main course is cooking but can't figure out how so will just tell you what is good. Smoked cream cheese on a Ritz cracker, bacon wrapped dill pickles, pig shots, Shotgun shells (no not real ones). That'll get ya started. I only got a couple of pics on this new tablet so I lost most of my grilling pictures when my oold tablet died on me.
