I have an old 1 and a young 1 and would like to know how to cook them

I breast them out slice them in half so they arnt as thick, pound to tenderize slice like chicken strips, marinate overnite in Italian dressing, flour and fry, This is good, I shoot several geese a yesr and this is the only way I cook mine anymore!

well we sliced the whole thing up and I want to cook the young one like our duck, marinate in Italian dressing for 30 min or more then grill

For duck the only way to go is wrapped in bacon and grilled to perfection making my mouth water just talking about it.
