by far my favorite "bonus" meat from the trapline is beaver to prepare it i take the hind quarters ans back-strap and score it to the bone about every inch and a half place in a skilet with a table spoon of bacon grease add salt and peper and brown on both sides. while your meat is browining chunk up 3-4 potatoes carots and cellrey and place in a roasting pan with 2 beef bulion cubes.add enough water to cover your veggies.then place your lightly browned beaver meat on top,sprinkle 1 pack of brown gravy mix over the top put a lid on it and put it in the oven for 2 hours on 225or unt potatoes are soft same recioe works well with muskrat......enjoy
